Refreshing Summer Cocktails

Longer evenings and higher temperatures not only signal BBQ season but that it’s also time to get creative with your drinks cabinet. Forget beer and go for something more exotic with a fabulous fruity concoction. We can’t promise the weather will be fine all summer long but for those days when the sun does show its face, these mouth-watering cocktails will definitely help keep you cool in the heat.

Cool sangria

Cool Sangria

A staple of balmy Spanish summers, sangria is a wonderful mix of rich red wine, zesty orange juice and bubbly lemonade. Gorgeous to sip on, it will also keep you cool all evening long.

Serves multiple – adjust amounts

Ingredients:

  • 3 parts red wine
  • 1 part orange juice
  • 2 parts lemonade
  • Fresh mint
  • Sliced fruit such as oranges and lemons
  • ice

How to make it:

Mix all ingredients together in a jug and then serve in chilled glasses. It’s as simple as that.

Refreshing Non-Alcoholic Pimms Punch

A twist on a British classic, this alcohol-free version allows the whole family to enjoy the fruity flavours and distinct tastes of Pimms punch. Throw in your favourite fruits as a garnish and enjoy outdoors with your BBQ feast.

Serves 4

Ingredients:

  • 400ml ginger beer
  • 400ml chilled black tea
  • 1/2 tsp good quality balsamic vinegar
  • 1/2 tsp dark soft brown sugar
  • Lemonade/ lemon soda (such as Sprite or similar)
  • Sliced oranges
  • Sliced strawberries
  • Sliced cucumber
  • Mint
  • Ice

How to make it:

Add the sugar to the tea and mix until dissolved. In a jug, add the sliced fruit, mint and ice before pouring in the tea. Combine with the ginger beer and top up with lemonade. Add balsamic vinegar to taste and mix well.

Chilled Peach Bellini’s

A sophisticated yet simple cocktail from Italy, a peach Bellini couldn’t be easier to make. Combining the sweet flavours of peach with Britain’s favourite sparkling drink, it’s a real summer classic.

Serves multiple – adjust amounts

Ingredients:

  • 4 white peaches (can use peach juice)
  • 1 part sugar syrup
  • 4 parts Prosecco

HOW TO MAKE IT:

If using real peaches, peel and pit them before blending up the flesh and straining to get the juice. Add 2 parts peach juice to one-part sugar syrup and stir well. Add 20ml of the peach mix to a glass and top up slowly with chilled prosecco.


Energising Watermelon Margaritas

Energising Watermelon Margaritas

It doesn’t get more refreshing then this. A summery twist on the popular margarita, this version has been enhanced by juicy fresh watermelon, sweet orange liqueur and a hint of invigorating lime.

Serves 2

Ingredients:

  • 340ml fresh watermelon juice
  • 100ml tequila
  • 30ml orange liqueur
  • Juice of 1 lime

How to make it:

Make your watermelon juice by scooping out the flesh of a watermelon, blending it well and then straining it to remove any pips. Cool the juice in the fridge before mixing it with the tequila, orange liqueur, lime juice and ice. Rim your cocktail glasses with salt and pour in the cocktail mix.

Invigorating Strawberry Lemonade

Perfect for quenching your thirst, this strawberry lemonade will become a favourite with both adults and kids. It follows a traditional lemonade recipe with the incredible addition of delicious strawberries.

Serves 5

Ingredients:

  • 350ml water
  • 95g sugar
  • 225ml lemon juice (about 4 to 5 lemons)
  • 100g strawberries
  • 500ml seltzer or sparkling water
  • Lemon slices and mint (optional)

How to make it:

Make sugar water by heating the water and sugar on the hob until they combine. Add the lemon juice and leave to cool. Blend the strawberries with 100ml of the lemonade and strain to remove seeds and skin. Mix with the rest of the lemonade mix and leave to cool before adding the sparkling water and serving with the lemon slices and mint.


Replenishing Gin Bramble

Replenishing Gin Bramble

Whether you’re a lover of gin or not, this rich berry infused gin bramble is a real winner at summer barbecues. Blackberries provide a fruity base note while a dash of citrus juice perfectly complements the tartness of the gin.

Serves 2

Ingredients:

  • 80ml gin
  • 20ml sugar syrup
  • 30ml blackberry liqueur
  • 30ml lemon or lime juice
  • Blackberries to garnish

How to make it:

Combine everything in a glass and stir well. Garnish with fresh blackberries.
