Ingredients
400g lean minced Scotch Beef (10% fat content or below)
1 tablespoon vegetable oil
1 tablespoon fish sauce
1/2 tablespoon soy sauce
1 tablespoon rice vinegar
1 teaspoon caster sugar
1 red chilli, finely chopped
1 clove garlic, minced
1 small thumb sized piece fresh ginger, peeled and grated
Juice and zest of 1 lime
TO SERVE
4 baby gem / 2 little gem lettuces, leaves picked
Small bunch of coriander, chopped to garnish
1 small red chilli and 2 small spring onions (finely sliced) to garnish (optional)
100g cooked basmati/jasmine rice (optional)
Cooking Method
Serve the lettuce cups filed with the beef topped with chopped coriander if serving as a starter or canape. If serving as a main meal place everything on the table, with some steamed rice perhaps, so people can make up their own lettuce cups.
