Asian Stir Fried Scotch Beef in Lettuce Cups

This South-east Asian-inspired recipe uses lean minced Scotch beef to create an incredibly quick, tasty and light family-friendly dinner.

How to cook & Ingredients

15 minutes
10 minutes
4 as a main, 6-8 as a starter

Ingredients 

400g lean minced Scotch Beef (10% fat content or below)

1 tablespoon vegetable oil

1 tablespoon fish sauce

1/2 tablespoon soy sauce

1 tablespoon rice vinegar

1 teaspoon caster sugar

1 red chilli, finely chopped

1 clove garlic, minced

1 small thumb sized piece fresh ginger, peeled and grated

Juice and zest of 1 lime

TO SERVE

4 baby gem / 2 little gem lettuces, leaves picked

Small bunch of coriander, chopped to garnish

1 small red chilli and 2 small spring onions (finely sliced) to garnish (optional)

100g cooked basmati/jasmine rice (optional)

  • Mix together the fish sauce, soy sauce, rice vinegar and sugar in a small bowl.

  • De-seed and finely chop the chilli, peel and grate the ginger, mince the garlic. Also pick the leaves from the lettuces, being careful not to tear them.

  • Heat a wok on a high heat. Once hot add the vegetable oil. Add the chopped chilli, ginger and garlic to the pan, being careful not to burn yourself. Let it sizzle in the pan for a minute while stirring - don’t let it burn. Add the minced beef, using a wooden spoon to break up the meat and allowing it to get as much contact with the pan as possible. Cook until the meat has browned all over and is starting to crisp up - the pan needs to be very hot.

  • Once the meat is thoroughly cooked and slightly crispy (this should take around 5-6 minutes) add the fish sauce mixture. Mix well and keep cooking for a minute or two.

  • Turn off the heat. Add the zest and juice of 1 lime and mix well.

  • Serve the lettuce cups filed with the beef topped with chopped coriander if serving as a starter or canape. If serving as a main meal place everything on the table, with some steamed rice perhaps, so people can make up their own lettuce cups.
