Beef and Black Bean Chilli

Serves 4


  • 300 g cooked Scotch Beef, shredded

  • 1 - 2 tbsp olive oil

  • 1 onion, chopped

  • 2 red chillies, chopped

  • 1 tbsp smoked paprika

  • 1 tsp ground cumin

  • 400g can chopped tomatoes

  • 400g can black beans, drained and rinsed

  • 1 tbsp wine vinegar

  • 2 tsp brown sugar

  • 4 tbsp chopped coriander

  • Tortilla chips, soured cream, grated cheese, to serve

Cooking Method

  1. Heat the oil in a large pan and cook the onion and chilli for 5 minutes until softened.
  2. Add the paprika and cumin and cook for a minute more.
  3. Stir in the beef and tomatoes, cover and cook for 15 minutes. Check the seasoning.
  4. Stir in the beans, vinegar, sugar and a splash of water and cook for a further 10 minutes. Divide between bowls and scatter over the coriander.


Serving suggestions

Serve with tortilla chips, soured cream and grated cheese.
