Lamb Burger Sticks
Serves 4 (big portions)
Lean Scotch Lamb mince
Red pepper (long pointy)
- Mix together 450g (1lb) lean lamb mince with 1 carrot, peeled and grated, 25g (1oz) mushrooms, thinly sliced, 1 tomato, chopped and 15ml (1tbsp) tomato ketchup.
- Take 1 large carrot, peeled and cut into thick long sticks, 2 sticks celery, cut in half lengthways and 1 long pointy red pepper, deseeded and cut into long thick strips.
- Take a handful of the mixture and mould it around the centre of the vegetable sticks. Line the grill grid with foil or non-stick sheet and place onto this the burger sticks.
- Place under a preheated grill and cook until mince is cooked through for approximately 10 – 12 minutes. (Turn over carefully)
Serve with extra crunchy dipping vegetables and a selection of dippy spreads: shop bought or simply make… Creamy Sweetcorn 45ml (3tbsp) low fat cream cheese mixed with 60ml (4tbsp) sweetcorn and 1 spring onion, finely chopped or Fiery tomato chilli 45ml (3tbsp) low fat cream cheese mixed with 1 tomato, finely chopped, ½ red pepper, deseeded and finely chopped and a pinch of paprika
