Lemon & Parsley Butter
100 g lightly salted softened butter
1 tsp finely grated lemon zest
1 ½ tbsp lemon juice
3 tbsp finely chopped parsley
- Place all the ingredients in a bowl.
- Blend together all the ingredients and ensure everything is well combined.
- Shape into a cylinder and roll in cling film.
- Keep wrapped in cling film and chill until needed then slice.
Tip: The butter will keep for up to 4 days in the fridge and can be frozen.
