Polish Style Minced Beef with Cabbage and Caraway

serves 4

Ingredients

  • 450 g lean Scotch Beef mince

  • 1 onion, chopped

  • 4 rashers rindless back bacon, snipped into pieces

  • 350 g (12 oz) white cabbage, halved and shredded

  • 2 tsp caraway seeds

  • 300 ml (half pt) hot beef or vegetable stock

  • 2 cooking apples, peeled, cored and cut into chunks

  • 2 tbsp cider or white wine vinegar

  • Season to taste

Cooking Method

  1. Stir-fry the minced beef, onion and bacon in a large non-stick saucepan until the mince becomes brown and crumbly and the bacon coloured.
  2. Add the cabbage, caraway seeds, hot stock, apples and vinegar. Bring to a steady simmer, cover and cook for 20 minutes.
  3. Season with a little salt and a generous twist of pepper.
  4. Spoon into deep bowls and enjoy.

Let’s go Indian! Replace the caraway seeds with 1tbsp Garam Masala or a medium hot curry powder. Serve with boiled rice and mango chutney.

A Trinity of flavours…caraway, cabbage and apple simmered with lean minced beef and bacon for a hearty one-pot meal. Neither a soup nor a stew, best simply mop up the juices with boiled potatoes or crusty bread.
