Quick Beefy Fix
Lean beef rump or sirloin steak
Slices French Stick
Heat 5 ml (1 tsp) oil in a large pan and cook 225 g (8 oz) lean beef rump or sirloin steaks, cut into thin strips, for 3 – 4 minutes. Add 1 onion, sliced, 100 g (4 oz) mushrooms, sliced, and 2 cloves garlic, crushed.
Cook for a further 2 – 3 minutes then add a dash of Worcestershire sauce and 150 ml (¼ pt) stock mixed together with 15 ml (1 tbsp) gravy granules. Heat for a further 1 – 2 minutes until gravy has thickened slightly. Season well with salt and black pepper.
Meanwhile toast 2 large slices French stick on both sides. Mix together 25 g (1 oz) softened butter with 5 ml (1 tsp) wholegrain mustard and 15 ml (1 tbsp) fresh parsley, chopped. Spread onto the bread and finish off under the grill.
Serve the quick beef casserole with the toasted bread, mashed potato and peas or green vegetables.
