Quick Lamb Rogan Josh Curry
Lean Scotch Lamb leg steaks or neck fillet
Rogan Josh curry paste
Can chopped tomatoes
- Heat 5ml (1tsp) oil in a large pan and cook 225g (8oz) lean lamb leg steaks or neck fillet, cut into small cubes, for 3 – 4 minutes. Add 30ml (2tbsp) Rogan Josh curry paste, 2 onions, sliced, and 1 clove garlic, crushed. Cook for 2 – 3 minutes.
- Add 200g can chopped tomatoes, 2 fresh tomatoes, cut into wedges and heat through for further 1 – 2 minutes. Stir in 15ml (1tbsp) fresh coriander, chopped.
Serve with rice and naan breads and pickles.
