Bacon with Tomato & Avocado Salad

A delicious combination of bacon, avocado, pine nuts and a light dressing. 

How to cook & Ingredients

Ingredients 

6 rashers of rindless Specially Selected Bacon

3 large ripe tomatoes, halved

1 ripe avocado

2 tbsp olive oil

2 tbsp red or white wine vinegar

1 shallot, finely chopped

1 tbsp freshly chopped herbs, i.e. parsley, chives or tarragon

freshly ground black pepper

1 tbsp pine nuts (optional)

Cooking Method

  • Arrange tomatoes and bacon on a grill pan lined with foil.  Cook under a preheated grill until the tomatoes are just tender and bacon well cooked and crispy.

  • Add the pine nuts and grill until golden brown - keep an eye on them, as they will brown very suddenly.

  • Mix together the olive oil, vinegar and shallot, herbs and any juices collected from the grill pan.  Meanwhile, peel, stone and slice the avocado and arrange on two plates.  Top with the warm tomatoes and bacon; drizzle on the dressing and serve immediately.
