6-8 wafer thin slices of cooked cold roast Scotch beef i.e. topside, sirloin, silverside
2 tbsp olive oil
1 small red onion, cut into wedges, leaves separated
2 large ripe tomatoes, thickly sliced
A handful of rocket leaves, washed
12 large basil leaves, torn
4 thick slices of sourdough / rustic white bread
Olive oil, for drizzling
Freshly ground black pepper
Lightly spread the bread with creamed horseradish or mustard for extra strength!
Try thinly sliced cooked cold lamb as an alternative to beef, drizzling the bread with ready-made pesto.
