Roast Beef with Beetroot Relish
1.25 kg (2 1/2 llb) lean rib of Scotch Beef, topside or sirloin joint
150 g (5 oz) or 3 cooked beetroot, roughly chopped.
10 ml (2 tsp) horseradish sauce.
- Preheat oven to: Gas Mark 4 – 5, 180oC, 350oF
- Weigh the joint and calculate cooking time.
- Place joint on a rack in a roasting tin. Open roast in a pre-heated oven for the calculated cooking time.
- Meanwhile in a saucepan, place the beetroot and horseradish sauce and heat through.
Serve the relish with hot slices of beef, stacked roasted sliced potatoes and carrot and swede mash. Alternatively, this is delicious served cold in open sandwiches or as a cold salad.
