Roast Scotch Beef

Serves 4


  • 2 kg topside of Scotch Beef

  • 150 ml red wine

  • 500 ml beef stock

  • Salt & pepper

  • 100 g flour

  • 20 g mustard powder

Cooking Method

  1. Preheat the oven to 190 degrees
  2. Drizzle the topside joint with olive oil and season
  3. Place in a roasting tin
  4. If you like your meat rare cook for 20 minutes per 450g + 20 minutes and if you like your meat medium rare cook for 25 minutes per 450g + 25 minutes
  5. Baste the meat every 15 minutes
  6. Once cooked remove from the oven and leave for 20 minutes to rest


For the gravy:

  1. Put your roasting pan back onto the heat
  2. Add 100g flour
  3. Mix until a paste is formed
  4. Add 100ml red wine
  5. Add 500ml of beef stock
  6. Transfer to a warm jug for serving
