Rosemary and Balsamic Scotch Lamb Steaks

Serves 4

Ingredients

  • 4 Scotch lamb leg steaks approx. 180g each – boneless or bone-in

  • Sprig of Fresh Rosemary

  • 12ml Balsamic Vinegar

  • 12ml Maple Syrup

  • Juice of 1/2 Lemon

  • Sea Salt and Black Pepper

Cooking Method

1.Finely chop the rosemary

2. Add the balsamic vinegar, maple syrup, rosemary and lemon juice together in a bowl, season with some salt and pepper

3. Preheat the grill to high or the oven to 220C/400F/Gas 6

4. Put the lamb steaks onto a metal baking tray

5. Brush some of the balsamic and rosemary sauce over the steaks

6. Grill or bake for 5 mins then turn the steaks over, brush some more of the sauce on this side and cook for another 5 mins

7. Serve drizzled with the cooking juices
