Scotch Beef Burger
Makes 4 burgers
450 g (1 lb) lean minced Scotch Beef
1 red pepper, deseeded and quartered
15 ml (1 tbsp) pesto or sundried tomato paste
4 small tomatoes, halved
30 ml (2 tbsp) fresh basil
- Season the mince. Divide into 4 and shape into burgers, flatten to ensure quicker cooking. Place on to a non-stick baking tray.
- Place pepper quarters next to the burgers. Brush the peppers with the pesto and fill with the tomato halves and basil.
- Place in a pre-heated oven Gas Mark 7, 220oC, 425oF and cook for 20 minutes.
Serve the burgers with the peppers together with potato wedges and salad.
(Place potato wedges into oven first as they will need approximately 30 – 40 minutes to cook).
