Scotch Beef Burgers with Rhubarb Ketchup

Ingredients

  • For the Scotch Beef Burger

  • 500g minced chuck Scotch Beef (or 15% fat Scotch Beef mince)

  • 1 tablespoon vegetable oil

  • Salt & pepper to season before cooking

  • Condiments of your choice

  • For the Rhubarb Ketchup

  • 750g Rhubarb (forced is best for its lovely pink colour), washed and cut into 2cm pieces

  • 1 large onion, sliced

  • 3 cloves garlic

  • Thumb sized piece of ginger, peeled and chopped

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • 1/2 teaspoon all spice

  • 100ml white wine vinegar

  • 100ml water

  • 125g caster sugar

  • 1 teaspoon fine sea salt

Cooking Method

For the Scotch Beef Burger
Divide the minced beef into four equal sized portions and use your hands to shape into flat circles, use the minimum of handling to get them into the right shape.

Heat a large non-stick frying on the hob at a high heat. Season the patties generously with salt and pepper on both sides.

Once the pan is smoking add a little vegetable oil then add the patties one by one, ensuring each one has full contact with the pan.

Leave them to cook for at least 2 minutes before turning them. We are trying to achieve a nice deep brown colour which will give the burgers great flavour with a crunchy outside and a soft, tender middle.

Using tongs to check the underside of the burgers – once you see a nice deep brown colour on one side turn them over. Again, let them cook without touching them for a couple of minutes.

Once they have developed the same nice deep brown colour on the other side turn them again. Repeat this process until the burgers are cooked through (in around 6-8 minutes) or finish them in the oven to cook through.

Once cooked through place the burgers on a warm plate. Leave to rest for a few minutes while you prepare the buns and condiments.

Serve in a brioche bun with the condiments of your choice. My favourite is cheese, sliced cooked onions, iceberg lettuce, tomato, ketchup and mustard mayo. Yum!

For the Rhubarb Ketchup
Preheat the oven to 160°C/150°C fan/gas 4.

Spread the chopped rhubarb in a single layer onto a baking sheet lined with baking parchment.

Bake for around 15-20 minutes until the rhubarb is just tender. Remove the rhubarb from the oven and allow to cool slightly. Turn the oven temp down to 120°C.

While the rhubarb cools sterilise 4 medium jars by washing in warm soapy water then place on a baking tray and transfer to the oven until dried out (around 10-15 minutes).

Place the cooled rhubarb, onion, garlic, ginger and spices into a food processor or blender and blitz until smooth with no lumps.

Transfer to a medium pan and add the vinegar, water, sugar and salt. Mix well.

Bring to the boil, then reduce heat and simmer for 15 mins then transfer to the warm sterile jars. This will keep for up to 6 months in sterile, sealed jars. Once opened store in the fridge and use within 3 weeks.

Serving suggestions

Nothing quite hits the spot like a burger, especially when it’s homemade using the finest Scotch Beef Mince. The secret of a great burger is using beef which isn’t too lean, otherwise it will dry out and not adding unnecessary ingredients like egg and breadcrumbs (that’s a meatball!). We like to keep our burgers simple, just 100% Scotch Beef with a generous seasoning of salt and pepper then pan fried or BBQ’d until they develop a lovely brown crust. You can really go to town with your condiments though. Here we’ve served it with a wonderful homemade Rhubarb Ketchup – the flavours work incredibly well together. The Ketchup will last for up to 6 months in sterile jars and if you use forced rhubarb it has a gorgeous pink colour.
