Scotch Beef Croquettes

Try this healthy take on the traditional croquettes, made with bulgur wheat, fresh herbs and delicious spices.

How to cook & Ingredients

Ingredients 

500g lean Scotch Beef PGI mince

30g bulgur wheat

150ml water

6g fresh curly parsley, finely chopped

3g fresh mint, finely chopped

15g fresh coriander, finely chopped

2 x garlic cloves, peeled and finely chopped

1 x lime, zested

1 x tsp chilli powder

2 x tsp ground cumin

2 x medium eggs

Rapeseed oil for frying

1 x small shallot, peeled and chopped

25g rocket leaves

100g flat leaf parsley

2 x tinned anchovy fillets

70ml olive oil

30 x capers

Cooking Method

For the Salsa Verde:

  • 1. Put all the ingredients into a small blender and pulse until blended. Set aside.

For the Croquettes:

  • Wash 30g of bulgur wheat and cook for 15 minutes in 150ml of water on a low to medium heat. All the water should be absorbed once the bulgar wheat is cooked.

  • In a large bowl mix the Scotch Beef mince, chopped herbs, garlic, lime zest, cooked bulgur wheat, cumin, chilli powder, eggs and some salt and pepper.

  • Take spoons of the mince mixture - approx 50g - and roll into rugby shaped balls.

  • Heat the oil in a large frying pan, cook a few of the croquettes at a time for about 10 minutes - turning as you cook.

  • Keep the croquettes warm while you cook the remainder of the mix.

  • Serve up by putting the croquettes onto a wooden skewer and serve with the salsa verde.
