Scotch Beef Fajitas

makes 2 fajitas

Ingredients

  • 180g Scotch Beef PGI Flank Steak

  • 1/2 red onion, sliced

  • 1 pepper, sliced

  • 1 tsp olive oil

  • 2 flour tortillas

  • Shredded iceberg lettuce

  • 1 tbsp yoghurt

  • MARINADE

  • Pinch cumin

  • Pinch smoked paprika

  • 1/2 clove garlic, crushed

  • 1/4 red chilli, finely diced

  • 1 tbsp olive oil

  • 1/4 lime, juiced

  • TOMATO SALSA

  • 1 tomato, concassed

  • 1 tbsp coriander, chopped

  • 1/4 green chilli, finely diced

  • 1/4 red onion, finely diced

  • 1/4 clove garlic, crushed

  • 1/4 lime, juiced

  • 1 tbsp olive oil

  • GUACAMOLE

  • 1/2 avocado, peeled and crushed

  • 1 tsp coriander, chopped

  • 1/4 lime juiced and zest

  • 1/4 red chilli, finely diced

  • 1 tsp red onion, finely diced

  • 1/4 clove garlic, crushed

Cooking Method

  1. Mix together all the marinade ingredients and add the Scotch Beef Steak, turn to coat and leave in the marinade for minimum 1 hour.
  2. To make the tomato salsa, mix all ingredients together and season with salt and pepper.
  3. To make the guacamole, mix all ingredients together and season with salt and pepper.
  4. Remove the Scotch Beef Steak from the marinade and pat dry with kitchen paper.
  5. Heat a frying pan over a medium heat, then add the tsp of oil, allow to heat then add the steak. Cook for 2-3 minutes each side [depending on the thickness of the meat].
  6. Remove the steak from the pan and allow to rest for 5 minutes, covered loosely with tin foil.
  7. Add a little more oil to the pan and add the sliced peppers and onion and cook allowing the vegetables to sear a little.
  8. Once the steak has rested, slice thinly and mix with the vegetables.
  9. Warm the tortillas in a dry pan or microwave. Lay tortillas on a plate and spoon in the beef and vegetable mix.
  10. Next add some salsa, guacamole, shredded lettuce and yoghurt.
  11. Roll up and enjoy!
