Scotch Beef Flank Steak with Spicy Salsa Verde

Serves 4

Ingredients

  • FOR THE STEAKS

  • 400 g Scotch Beef PGI flank steak

  • 2 tbsp vegetable oil

  • 1/2 tbsp soy sauce

  • 1 tsp red wine vinegar

  • 1 tbsp lemon juice

  • 1/2 tbsp Worcestershire sauce

  • 1/2 tbsp Dijon mustard

  • Pinch of salt and pepper

  • FOR THE SALSA VERDE

  • 1 small bunch fresh coriander

  • 1/2 small bunch oregano

  • 1 clove garlic, crushed

  • 1 red chilli, seeded and finely chopped

  • Juice of 1 lemon

  • 2 tsp red wine vinegar

  • 2 tsp olive oil

  • 1 tsp caster sugar

  • Pinch of salt and pepper

Cooking Method

  1. Mix the marinade ingredients together in a bowl and add the flank steak. Allow to marinade for 30 minutes, or up to 6 hours in the fridge, turning the steak every so often.
  2. Remove the steak from the fridge and allow it to come to room temperature.
  3. Meanwhile, prepare the salsa verde. Finely chop the herbs and place in a small mixing bowl. Add the crushed garlic, finely chopped red chilli, olive oil, vinegar and lemon juice then stir in a teaspoon of caster sugar. Season.
  4. Heat a griddle pan or frying pan on a high heat. Remove the steak from the marinade using kitchen roll to dry both sides of the steak. Rub a little oil all over the steak to stop it sticking to the pan. Place the steak into the pan (you should hear a sizzle when the steak touches the hot pan).
  5. Cook the steak for around 3-5 minutes on the each side – ensuring a nice brown colour on the outside. Once it’s cooked to your liking, transfer to a warm plate and cover with tin foil. Let the meat rest for 5-10 minutes.
  6. Cut the steak into thin strips working against the grain of the meat. Serve it on a plate drizzled with the salsa verde.

Serving suggestions

Ideal served with tortilla wraps or potato wedges and salad.
