Scotch Beef Steak, Sliced, With Roasted Spring Onions
1 sirloin Scotch Beef steak, about 150 g
4-5 spring onions
Freshly ground pepper
1 tbsp finely chopped thyme leaves
1 garlic clove, finely chopped
- Rub the steak with pepper, thyme, garlic and 1 tbsp olive oil and leave to marinate over night if possible, but 15 mins will do.
- Wash and trim the spring onions, do not cut off the green part completely. Heat 1 tbsp olive oil in a pan and fry the onions golden brown, turning frequently during the process.
- Take the onions out of the pan and arrange over a plate. Fry the steak in the hot pan for 2-4 minutes on each side (rare, medium or well done, according to preference). Season and cut into thick slices, lay the slices on the onions and serve right away.
