Scotch Beef Steak, Sliced, With Roasted Spring Onions

Ingredients

  • 1 sirloin Scotch Beef steak, about 150 g

  • 4-5 spring onions

  • Olive oil

  • Salt

  • Freshly ground pepper

  • 1 tbsp finely chopped thyme leaves

  • 1 garlic clove, finely chopped

Cooking Method

  1. Rub the steak with pepper, thyme, garlic and 1 tbsp olive oil and leave to marinate over night if possible, but 15 mins will do.
  2. Wash and trim the spring onions, do not cut off the green part completely. Heat 1 tbsp olive oil in a pan and fry the onions golden brown, turning frequently during the process.
  3. Take the onions out of the pan and arrange over a plate. Fry the steak in the hot pan for 2-4 minutes on each side (rare, medium or well done, according to preference). Season and cut into thick slices, lay the slices on the onions and serve right away.
