Scotch Beef Steak with Goat's Cheese Butter
2 lean Scotch Beef sirloin steaks
100 g (4 oz) goat's cheese, softened
100 g (4 oz) unsalted butter, softened
15 ml (1 tbsp) fresh parsley, finely chopped
15 ml (1 tbsp) fresh basil, roughly torn
Goat’s cheese butter
- Place all ingredients into a food processor and blend thoroughly – about 2 minutes. *This can be done by hand if you wish, just work the butter in a bowl and then add cheese and herbs.
- Roll in cling-film into a sausage shape and refrigerate until ready to use.
- Grill or fry to desired preference and serve steak with the goat’s cheese butter on top.
Serve with baked potatoes and a salad of sliced tomatoes, blanched green beans and black olives.
