Scotch Beef stovies with crisped onions



  • 300g leftover Scotch Beef roast, shredded or broken up

  • 50g beef dripping or butter

  • 2 onions, sliced

  • 850g potatoes, peeled and cut into large chunks

  • 150mls beef or chicken stock

  • Small bunch parsley, washed and chopped

  • 2 shallots, peeled halved and very thinly sliced

  • 200ml oil for frying

Cooking Method

This lovely dish is a Scottish classic using any leftover Scotch Beef you may have from the Sunday Roast. We’ve paired it with Cross Borders Heavy ale. It’s tasting notes are Pale, Light Crystal and Wheat are joined by Melanoidin and CaraRed malts to create a sublime modern take on a traditional Scottish style. Bramling Cross hops add an ever so slight bite to the finish of this rich and malty beer which complements the stovies perfectly.

  1. To make the fried onions, heat oil for frying till very hot, add shallots and keep moving in the oil, be very careful! Cook until just browned, but not burnt. Drain on kitchen paper and sprinkle with salt, allow to cool.Saute onions in cooking pot till lightly coloured
  2. Add potatoes and combine, pour stock over and bring to boil
  3. Simmer till potatoes are just cooked, add beef and combine
  4. Continue to cook till the potatoes have absorbed almost all the stock
  5. Season to taste, stir in parsley and serve with fried onions sprinkled all over
