Scotch Lamb Burger with Salsa

serves 4


  • 450 g (1lb) lean Scotch Lamb mince

  • 1 small onion, chopped

  • 1/2tsp fresh rosemary

  • 1/2tsp fresh mint

  • Salsa

  • 2 tomatoes, chopped

  • 1/2 onion, finely chopped

  • Quarter cucumber, chopped

  • 1tsp white wine vinegar

  • 1tsp olive oil

  • 1tsp lemon juice

  • 2tbsp light mayonnaise

  • tsp wholegrain mustard

Cooking Method

  1. Mix together in a bowl the minced lamb, onions and herbs. Divide the mixture into four portions and shape into burgers.
  2. Cook on a wire tray in the oven for approx 20 minutes or grill until thoroughly cooked.
  3. For the salsa, mix all the chopped ingredients together. Add vinegar, oil and lemon juice. Mix light mayonnaise and mustard together

Serving suggestions

Place the burger in a sesame bun and spread with the mayonnaise and finally the salsa piled on top.
