Steak Sandwich with Salsa and Crispy Onions

Serves 2

Ingredients

  • 2 lean Scotch Beef sirloin, rump or fillet steaks

  • 4 slices bread, e.g., herb, walnut, tomato bread or ciabatta

  • 1 onion, sliced thinly

  • 5ml (1tsp) oil

  • 5ml (1tsp) sugar

  • 227g (approx) small can chopped tomatoes

  • 1 spring onion, finely chopped

  • 1 red chilli, deseeded and sliced

  • 1 small avocado, peeled and diced

  • 1 clove garlic, crushed

  • 15ml (1tbsp) fresh mint, chopped

  • 15ml (1tbsp) tomato purée

  • 5ml (1tsp) sugar

Cooking Method

  1. In a small non-stick saucepan, fry the onions with the oil and sugar for approximately 10 minutes until crispy and browned.
  2. In a large bowl mix all of the salsa ingredients.
  3. Place the steaks under a preheated grill and cook.
  4. Toast the bread on each side towards the end of the cooking time.

Serving suggestions

Serve the steak on the toasted bread with crispy onions and salsa, mixed salad leaves and chunky homemade oven-baked chips.
