First Coast was formed in 2003 with the intention of bringing quality, no nonsense food to the West of Edinburgh in a price range that meant people could simply go for their tea as well as have a special night out.

We have, since opening, had a policy of using lesser used cuts of meat and fish that are not endangered. You will frequently find Ling or Lythe used instead of Cod or Monkfish. You will also find Oxtail or Porky Belly featuring instead of prime cuts. We believe that they are not only tastier but better value.

We only ever sell Scotch Aberdeen Angus beef that has been hung for a minimum of 3 weeks. We buy in the full Shortcut and take the sirloin and fillet from it and use the off cuts for mince or burgers etc. Again by doing the butchery ourselves, we can sell the meat at a more accessible price. Ultimately we believe that taste is the most important aspect of food – our food is not elaborate in presentation it but is simply tasty stuff on a plate.
